Baked Brie

1 small wheel of Brie
-
one half cup Apricot Pepper Jelly, Raspberry Chipotle, Wild Huckleberry, or Mango
-
1 egg yolk
-
One quarter cup milk, heavy cream, or soy milk
Mix egg (yolk) and milk/cream for egg wash. Unfold puff pastry sheets. Slice wheel of Brie in half. Spoon jelly into the center of lower part of Brie wheel. Opt: Sprinkle raisins and chopped nuts. Put wheel back together. Place Brie into center of puff pastry. Fold one sheet of pastry up and round edges, over the top of wheel. Seal with egg wash. Fold one sheet of pastry over top and tuck underneath wheel of Brie, cover puff pastry in egg wash mixture. Opt: Cut a shape in the center for design. Bake 20-30 minutes at 350 degrees until golden brown. Cool 15 minutes, serve with hearty bread cubed or specialty crackers
Lady Blush Cheese Dip

2 8 oz. packages cream cheese

One half Jar Apricot, Marionberry Pepper Jelly or your favorite

3 minced garlic cloves
-
2 eggs
-
1 cup grated sharp cheddar cheese
Add favorite herbs, minced and stirred into mixture. Preheat oven to 350 degrees. Spray baking oil into 8 in spring form pan. Mix all ingredients together. Pour into pan. Bake 40 minutes. Heat 2 tbsp of Pepper Jelly in microwave just before dip is done. Remove from oven and glaze top with jelly. Place back in oven for 5 minutes. Cool for 5 minutes. Remove and serve with cubed bread or crackers.

Apricot Cookie Envelopes

1 1/2 cups of all purpose flour

1/2 tsp. salt
-
1 cup chilled butter or margarine
-
3 oz. cream cheese chilled
-
1 lbs ice water or more if needed

1/2 cup Apricot Pepper Jellly
-
1 tsp. grated lemon zest
-
1 egg white, beat until foamy
-
1/4 cup finely chopped blanched almonds
1. Combine flour and salt in food processor. 2. Add butter and pulse til size of peas 3. Add cream cheese and blend until dough forms. 4. If dough is too dry, add ice water slowly 5. Form into flat disc and wrap in plastic wrap; chill for 30 minutes. 6. In small bowl combine apricot jelly and lemon zest. 7. Preheat oven to 350 degrees. 8. Divide pastry into thirds and roll out to 1/8 inch thick. 9. Cut with 3 inch round cookie cutter. 10. Place cookies on backing sheet and place 1/2 tsp. of apricot mixture in center of cookie. 11. Brush edges with egg white and fold bottom edged over to form a cone shape. 12. Brush again with egg white and sprinkle chopped almonds over top of jelly. 13. Bake for 12-15 minutes until golden brown. 14. Cool on wire rack and store in airtight container.

16 oz cream cheese

small can of salmon
-
1/4 teas chili powder
-
1/4 teas paprika
-
1 crushed sprig fresh rosemary w/o stem

1/2 teas garlic (dehydrated best here)

1 teas Ginger Garlic Pepper Jelly
-
1 teas Apricot or Mango Pepper Jelly
-
1/2 minced onion (dehydrated)
-
sea salt to taste
Mix all ingredients, wrap in plastic wrap forming a log roll, chill 2 hours minimum. To Serve: place on a bed of lettuce...garnish with fresh mint, thyme or any fresh herb.
Drizzle your favorite jelly over the top we suggest using our Mango Pepper Jelly & or include a small serving bowl filled with jelly. Serve with crackers for the perfect appetizer.

1 cup flour

½ cup butter

2 Tbsp water
Mix like pastry and pat out (with fingers) in 2 strips 4x 11 on large cookie sheet. Heat 1 cup water and ½ cup butter to boiling point. As you tak from burner, add 1 cup flour. Sitr until smooth. Stir in 3 eggs, one at a time and beat after each. Add ½ teas vanilla. Spread on first misture. Bake 45 minutes @ 375 degrees; cool.
Frost with:

1 cup powdered sugar
-
2 Tbsp buttermilk (few drops)
Sprinkle with slivered almonds, or chopped walnuts, pecans, cut into bars.
